It is made with fresh cow's milk from livestock explotacioness located in the geographic area of the PDO, which meets the parameters set. Milk can be used raw or pasteurized. It is a soft paste cheese with washed rind, lenticular shaped and matured for at least six days. The crust is thin and elastic, yellow to deep yellow straw, bright, clean and smooth. The paste is uniform in color, ranging from white-ivory and pale yellow, glossy, no cracks, which may present in low numbers eyes, small, angular or rounded and irregular distribution.
Weighing between 0.5 and 0.6 kg.
